Catching Up & an Easy Dinner Recipe!

Happy Tuesday! Today I want to catch you up on a Monday that was over in a flash. Seriously, where did the day go?

1.Β Lunch Break Shopping

During my break yesterday I nipped into HomeGoods to look for some new couch pillows.

I wanted big, comfortable ones that were light in color to lift up the darkness of the couches. Decorative pillows are nice, but it was more important to me to find ones that Adam, Cecil and I would all love actually using. Luckily I was able to find four matching pillows!

I’ll need to pick up a few others that are light but more colorful to round out the bunch, but these pillows are a good start.

2. After Work Furniture Setting

When the clock hit 6pm I was out of the office and on my way to the house. I was excited to lay out my new pillows, but Adam had also taken delivery of our new rocking chair recliner earlier in the afternoon and I wanted to find a spot for it.

I really feel like the downstairs is coming together! I love all of the furniture pieces together… and am super anxious to move in.

Unfortunately the kitchen is in a state of complete disarray. We removed the old backsplash but haven’t been able to install the new one due to some issues with the adhesive residue the old backsplash left. It looks horrible and it’s going to be a job prepping the walls.

For the rest of this week I will bask in the glory of my living room and leave the kitchen to worry about later!

3. Quick & Delicious Dinner RecipeΒ 

I didn’t get back to the apartment until close to 8pm last night and just wanted to whip up something fast for dinner. I decided on my favorite honey chicken tenderloins.

I’m no food blogger, but I wanted to share this “recipe” because it’s so easy and I thought some of you might like it.

You only need five ingredients:

  1. One pound of boneless chicken tenderloins.
  2. Two eggs
  3. Flour (~1.5 cups)
  4. Italian bread crumbs (~1.5 cups)
  5. Pure honey

You make these chicken tenderloins in just a few simple steps:

  1. Pre-heat oven to 350*F.
  2. Set out three bowls: one with breadcrumbs, one with flour and one with two eggs that you whisk together.
  3. Dip a tenderloin in the flour and coat it evenly.
  4. Then dip the tenderloin in the egg and coat evenly.
  5. Finally dip the tenderloin in the breadcrumbs and coat evenly.
  6. Lay out the chicken on a baking sheet (I use parchment paper to make clean up easy later).
  7. Drizzle honey on top.
  8. Pop in the oven for ~25 minutes.

Your side dish can be anything you like. Sometimes if I have the energy I’ll make some asparagus or brussels sprouts, but last night I just put a sweet potato in the microwave and called it a day.

This little meal is not fancy at all but it works great for those nights when you need to cook something but you don’t want to spend a lot of time or energy on prep :). There are no after pictures because … as soon as the food was ready I had to eat it. Delicious!Β If you decide to try this out let me know what you think!

    I do a mix of prepping for dinner and cooking each night. If I make anything that takes more time I usually plan to do that on Sunday. Ive made a similar chicken dish but I love the idea of adding honey! Looks like your house is really starting to come together!

    The new place is really coming together. I’m so blessed, Mrs Schlub does most of the cooking. She likes to throw things in the crock pot and let it slow cook all day. We had chili and cornbread the other day and it was amazing.

    I am making our Thanksgiving dinner. Just bought a frozen turkey today (Tues) and now see that it will take 4 days to thaw in my fridge. Guess I’m going to have to up the game and thaw it out in water in the sink. I’ve never done that before, but thank God for YouTube!

      Hahahah I’ve thawed plenty of things in the sink in warm water – it works well :). I frequently forget to take meat out of the freezer in time!

    I do pan-fried or baked chicken tenders all the time! It’s funny how much juicier chicken is when you use breadcrumbs! I love sweet chicken, too; honey is so good on it!

      Thank you! πŸ™‚ Our couches are pretty dark too, but I’m lightening them up with light pillows and light throw blankets. If you don’t want to invest in new couches this year, check out Homegoods, Target, etc. for some inexpensive light pillows! I bought four big, super soft pillows at Homegoods for only $60 for all four!
